Dark Side Smoothie

  
We all love a good smoothie, and we all love a good smoothie with chocolate. 

I created and whipped this bad boy up after spin class a couple weeks ago, and will definitely be doing it again.

The peanut butter is protein packed, and the powder is super low in calories, is made with half all natural chocolate, and only has .5 grams of fat. 

It’s good to feel bad, huh? Thankful we aren’t being bad, we are giving our body what it needs post workout. ­č嬠

Ingredients

Jif All Natural Peanut Butter, Creamy

Hershey’s Special Dark Powder

Milk

Crushed Ice

I use a Ninja Blender that has the singke serve blending cup, as well as the regular blender.

Using a single serve cup, fill it about half way with crushed ice.

Place two large spoonfuls of peanut butter and 1tbls of Special Dark in over the ice.

Top off with your choice of milk, I start off with filling just over half full. 

Screw blade onto cup and begin blending. If the smoothie is too think, add more milk to get it to a smoother consistency. 

One fully blended (I blend until I have a smooth, complete “vortex” in the cup), pour into glass, or drink right from the single serve cup, and enjoy!

Now remember, we are using DARK chocolate, don’t expect it to be sweet like a shake, but it isn’t bitter either. The peanut butter adds a little sweetness, but I just wanted to to know ahead of time, we are on the Dark Side after all.

Leopard Print Lindsay’s Easy Snack Mix

   

This is the easiest mix to ever come into my brain. It is also delicious and healthy! 

While I am currently toying with adding other stuff to it, I’ll share the base with you. 

Enjoy!

Ingredients:

Raw Cashews

Pineapple Pieces (dried)

Almond Slices (you can use regular almonds, I just like the texture of slices.

Craisins (Original and Cherry both taste good in this mix. Heck, use both if you want.) 
  

In an air tight bowl, place 1/2 cup of each ingredient. Put lid on bowl and shake/turn until mixed.

Then eat it.

That’s all, see? Easy! 

  

 

Snack Time!

   
I think most of us reach a point in our day when we just need a snack. Before you reach for something sweet and full of sugar, give this a try! 

It’s natural, healthy, and only around 80 calories! Also, it’s quick!

One Laughing Cow “wedge” will spread evenly over two Corn Thins.

I unpeel the wedge and cut it in half, lengthwise, and then gently spread, and enjoy! 

I choose the Mozzarella Sun-Dried Tomato & Basil, but The Laughing Cow has many other varieties! Give them a try, and as they say, “Have you laughed today?” 
 

Filling Fruit Smoothie

  
I think you all know by now I greatly a good smoothie. I whipped this one up this morning, and it was not only tasty, but filling as 
How I did it:

4-5 Frozen Strawberries (about 1/2 a cup)

1/2 Cup Frozen Mango

1/2 Cup Frozen Dark, Sweet Cherries

1-1 1/2 tsp Chia Seeds

1 Single Serve Container Vanilla Yogurt (6oz)

1 Cup Milk (I use 1%)
Place ingredients in Ninja Blender Single Serve Cup, or in which blender you choose, in that order. Blend until smooth, serve, and enjoy!

As always with my smoothies, you can add a scoop of protein powder, or adjust ingredients as needed. 

“Ochango” Smoothie

  
Here’s another Leopard Print Lindsay smoothie to add to your book!

I call it the “Ochango” after a juice I had years ago, that I have never been able to find again. It was made by Ocean Spray and was an orange, cherry, mango juice; thus the name “Ochango”.

Ingredients:

1/2 cup Crushed Ice

1/2-1 cup Chopped, Frozen Mango

1/2-1 cup quarted Cherries (I used “Sweet Cherries)

1/2 tbls Chia Seeds

1 cup Orange Juice

Place in Ninja Blender, single serve cup, in that order. (Or in any other type of blender, in that order.) 

Blend until smooth (add more orange juice if too thick), and enjoy!

Chocolate Peanut Butter Smoothie

  
Oooh my gosh, this is delicious. I won’t even try to pass it off as totally healthy, but it isn’t bad for you.

I’ll whip one of these up after a good, long run to replenish my body. It’s chocked full of protein and tastes like a treat!

Whip It Up:

3/4 – 1 cup Crushed Ice

1 tbls Mini-Chocolate Chips (I use Nestle Toll House brand)

1 1/2 – 2 tbls Hershey’s Chocolate Syrup

1 tbls Natural Peanut Butter (creamy, I use Jif Natural)

3/4 – 1 cup Milk (I use 1%)

Place that in your Ninja Blender (or whatever blender you own) in the order above, blend until smooth and enjoy! No really, like ENJOY! Mmm…so tasty!

I use a Nutri Ninja Blender that has the single serve cup. I LOVE this blender and highly recommend it!

Sunrise Smoothie

  

I whipped up this smoothie on a whim one day, and it was so good I had to recreate it! It is so simple to make, needing only four ingredients, and is great way to start your morning. 

Directions:

3/4-1 cup Crushed Ice

1/2-3/4 cup Chopped Strawberries (Fresh or Frozen)

1/2-1 tsp Chia Seeds (or more if you’d like)

1 cup Orange Juice

Add items to blender and blend until smooth. Yeah, it’s that easy. 

I used my Ninja blender with the Single Serve Cup, and put the ingredients in as they are listed above. 

If you find that it is really thick, and not blending smoothly, add more orange juice. Sometimes there is too much ice and it turns to thick slush. 

Once fully blended, and fairly smooth, stop blending pour into glass (or in my case, remove blending piece) and enjoy!

Easy Chicken Pot Pie

   

This is an easy, and delicious recipe that my parents taught me a few years ago. It doesn’t take long to whip up, and even my tiny human eats it, and asks for seconds. 

Ingredients:

1 pkg Pillsbury Pie Crust (with two roll out crusts)         

2 10.5oz can Campbell’s Cream of Chicken soup with Herbs

2 10oz can Valley Fresh Chicken Breast

1 14.4oz bag Frozen Mixed Vegetables

Fresh Ground Pepper for taste

0.5-1 tbls Butter 

  

Remove one pie crust, and gently roll out. Place in pie pan, pressing into sides and bottom, as well as along edges.

Open the cans of chicken and drain the water out.

In mixing bowl, combine both cans of soup, chicken, and the bag of veggies. Mix throughly, and season with fresh ground pepper to taste.

  

Pour mixture into prepared crust.

  

Prepare second crust by gently rolling out, and cutting a small hole in the middle. (My little one chose our small apple shaped cutter.)

Place over the mixture, and press along the edges to seal. 

Using a sharp knife cut four small slits about an inch from the hole, then four more toward the out edge to vent. (See picture above.)

Take knife and gently cut the excess crust off from around the edge of the pie pan. 

 

Melt butter in small, microwave safe bowl. (I put it in for 15 seconds.) Using a small brush, “paint” butter over entire crust, it is okay if you don’t use all of the butter. 

 
Place in oven preheated to 400 degrees and bake for 20-30 minutes. Check at 20 minutes, and leave it in if the crust isn’t nicely browned around the edge, and the middle isn’t a little toasted. 

If you have a crust cover, I recommend using it. I do not have one, and the edges of my crust can sometimes come out over done.  

Let cool for 5 minutes, serve and enjoy! 

The “Guilt Free” Pizza

 
Let’s face it, we all enjoy pizza, but sometimes we don’t want all grease and calories that can sometimes come with it. I made this for dinner the other night, and it was not only delicious, but I didn’t feel guilty eating it!

So, to whom ever invented the “Margherita Pizza”, thank you.

This is my version, and I hope you enjoy it.

Ingredients:

1 Boboli Whole Wheat Pizza Crust*

1 packet Boboli Pizza Sauce

2 Roma Tomatos, sliced

Tillamook Shredded Mozzarealla 

Spice Islands Sweet Basil 

Directions:

Spread the sauce over the pizza crust. (I used only about 1/2-3/4 of the packet.) Next sprinkle desired amount of Tillamook Mozzarella cheese over the crust. (I did a light sprinkling, so I could still see the sauce.) Place the sliced Roma tomatoes evenly around the crust. Sprinkle the desired amount of Spice Islands Sweet Basil over entire pizza. (I did at least 2 light sprinklings around it.)

Bake at 450 degrees for 10-15 minutes. (The crust package said 8-10, but mine needed longer, I ended up going for 15 minutes.)

Once it is finished, let it cool for a minute or two, slice, and enjoy!
